OMG Carrot Mug Cake!

Satisfy Your Sweet Tooth In Less Than 5 Minutes!

Sometimes I just HAVE to have something sweet, and while Lily's Dark Chocolate (sweetened with Stevia) is my go to, this is my favorite quick treat when I am not in the mood for chocolate.

I know, I know, who is never in the mood for CHOCOLATE? My friend Amy doesn't like chocolate, like at all. She eats every other sweet thing under the sun and I know she would love this carrot cake, but she doesn't like chocolate. While she is one of my best friends, I sometimes have to wonder .... can I REALLY ever trust someone who doesn't like CHOCOLATE?

In any event, this sweet treat really does hit the spot and tastes SO indulgent! I even made this for my kids and they were over the MOON, they thought it was so good!


The recipe below serves one but if you feel like doubling it and cooking it in an extra large mug or bowl, I won't tell!


OMG Carrot Mug Cake

Serves 1


FOR THE CAKE:

1/4 C grated carrots

1 egg white

2 T unsweetened applesauce

2 T almond flour

1 t baking powder

1/2 t cinnamon

1/4 t salt

dash of nutmeg

3 packets Truvia

1 T chopped walnuts


FOR THE FROSTING:

1 oz. cream cheese, softened

1 T sugar free maple syrup

1/4 t cinnamon

1 packet Truvia


Spray a large ramekin or coffee mug with cooking spray. Mix all cake ingredients together in a small bowl and pour into prepared ramekin or mug. Microwave 1 minute 45 seconds or until set. Invert onto a plate and shake gently to release.


While cake is cooling whisk frosting ingredients together. Pour over cake and devour!
